10/20/2011 - We are at Shaker Square on Saturday mornings and Chagrin Falls on Sundays. Maple syrup is in stock in all sizes. Beef cuts will be available again after Thanksgiving.

3/26/2011 - Maple sap has stopped running for now, Saturday, March 26th, so we are not planning to gather from the buckets or boil at the sugar house. Please check back next week.

2/12/2011 - We are getting ready to make Maple Syrup, so we won't be at the market for a few Saturdays. Planning to return with the 2011 crop in late February or March--as soon as the sap starts to run.

Maple Syrup
We offer three varieties of Grade A maple syrup, subject to availability: "Light Amber" (also sometimes known as "Fancy"), which is made early in the season, followed by "Medium Amber" and then "Dark Amber." Each one has its own subtle flavor, and preferences depend on individual taste. They are priced the same.

Our organic maple syrup differs from many commercial offerings found in stores and catalogues: (1) we add nothing except tiny amounts of organic butter to prevent the evaporator from frothing, (2) we fire with fallen wood in stead of fossil fuels, (3) we do not gather sap from trees along public roads that may have been sprayed with brush killers, (4) we do not re-drill the tap holes to extend the season or use vacuum pumps to enhance sap flow and (6) we limit the number of taps per tree to protect forest health. The result is an artisan product with the true old fashioned taste of pure maple syrup.
